Lentils - They're what's for dinner




At my house we eat lentils are a regular basis. They are quick and easy to prepare, kind of a fast-food version of beans. I always keep a look-out for new recipes to keep dinner interesting. The one below is a tried-and-true favorite that I thought you might enjoy.

Curried Lentils

Serves 6

Ingredients:
1 cup raw lentils
1 teaspoon olive oil
2 cloves garlic, minced
12 ounces spinach leaves, fresh, washed and chopped
1 (14 oz) can plum tomatoes, wtih liquid, chopped
3 Tablespoons soy sauce
1 Tablespoon curry powder
1 Tablespoon fresh grated ginger
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg

How-To:
1. Wash and sort the lentils.
2. Cook lentils in 4 cups of water for 10 minutes on high heat and and cook until they are tender but firm, usually 10-15 minutes.
3. Heat the olive oil in a large skillet.
4. When it is hot, add the garlic and saute over low to medium heat for 1 minute or until the leaves are wilted.
5. Add the lentils and remaining ingredients to the skillet.
6. Cover and simmer over very low heat for 15 minutes.
7. This is very tasty served with brown rice.

Anticancer Note:
-Turmeric (in curry powder), garlic, ginger, and olive oil are all recommended for daily consumption to both prevent and combat cancer.
