African Sweet Potato Stew



This recipe for Chicken in Peanut-Tomato Sauce was found in the website Congo Cooking. Now that Janie is home I am striving to build up my collection of African/Congo recipes. I modified it a bit and my notes are below. As far as spice level, I prepared it on the mild side in the hopes that my selective eaters would enjoy it. Janie, Kirk and I all really enjoyed it. Ian liked the plain chicken.

Ingredients:
-peanut oil (or any cooking oil ) I used canola
-one chicken (for the gourmet version, 4-6 chicken breasts) cut into bite size pieces Tip: A cooked rotisserie chicken makes for quick preparation
-
1 or 2 onions, chopped
-2 cloves garlic, minced
-1 cup sugar-free tomato sauce
-1 cup natural peanut butter (alternatively sunflower butter can be used)
-about 1 cup water
-cayenne pepper or red pepper, black pepper, salt

Directions:
1. Heat a couple spoonfuls of oil in a deep pot. Add the chicken and fry it on both sides until it is browned and nearly done. Remove the chicken and set it aside. If you use a cooked rotisserie chicken you can skip this step. I totally cheated and used a rotisserie chicken.
2. Saute the onions and garlic in the same pot.
3. Stir in the tomato sauce. Reduce heat and simmer for a few minutes.
4. Return chicken to the pot. I didn't because I wanted to have plain chicken for my selective eater. It doesn't matter much really. Do what works for your family.
5. Stir in peanut butter. Tip: Use a very low heat so the peanut butter doesn't scorch.
6. Stir in enough water to make tomato sauce and peanut butter into a smooth sauce. Add spices to taste. Stir.
7. Simmer on low heat until chicken is done.

Serve with rice or boiled plantains.

Anticancer Note: Research supports that onions and garlic are effective at stopping cancer development for many types of cancer. Cooked tomatoes contain lypocene, which directly contributes to longer survival for men with prostate cancer.
